A mum-of-two has shared her simple recipe for a twist on Mexican favourites tacos and nachos.

Adele Barbaro, from Melbourne, created a delicious mash-up she called ‘tachos’, which only cost her $24.05 to make six ‘generous’ servings.

‘You need tachos in your life and you didn’t even know it. What are tachos you ask? Well they are a combination of tacos and nachos. It only cost $4.03 per portion and it’s a delicious fakeaway comfort food for the whole family,’ she wrote on Instagram.

You’ll need tortilla chips, Mexican bean mix, cheese, beef mince, passata, lettuce, tomato, taco seasoning mix, sour cream, avocado, lemon and spring onion.

How to make Adele’s tachos 

INGREDIENTS 

• 300g tortilla chips (unsalted or only lightly salted) 

• 200g Mexican bean mix 

• 250g Mexican cheese or Tasty cheese

• 400g beef mince

• 400g tomato passata 

• 1.5 cups ice berg lettuce, shredded

• 1 fresh tomato, diced 

• 2 tbps taco seasoning mix 

• 1 cup sour cream 

• 1 avocado

• 1/2 lemon 

• 1/4 cup spring onion, diced

• Salt and pepper, for seasoning

METHOD

Pre-heat oven to 200C.

Heat oil in a pan. Add mince, and cook until browned. Add beans, and stir them through until well combined. 

Add taco mix and passata, and stir occasionally until the sauce has thickened.

In a large, deep baking tray, arrange a layer of corn chips, top with mince sauce and sprinkle with cheese.

Bake for 15 minutes, or until hot and cheese has melted on top.

In the meantime,  prepare the fresh ingredients for the topping – including the diced tomatoes, shredded ice berg lettuce, and spring onion for garnishing.

To make a guacamole, add diced avocado in a bowl, squeeze in half a lemon, season with salt and pepper to taste and mix well.

Pull the tachos out of the oven, and top with lettuce, tomatoes, guacamole and sour cream and sprinkle with spring onion. Serve.

To make the family-favourite dish, Adele started by heating oil in a pan. Next, she added the beef mince, and cooked until brown.

She added the beans, and stirred them through until well combined.

‘Give them a little squish so they mix with the mince,’ she said.

She then added the taco mix, followed with the tomato passata, and stirring occasionally until the sauce has thickened.

In a large, deep baking tray, she arranged a layer of corn chips, topped with the mince sauce and sprinkled with cheese.

She baked it in a pre-heated oven at 200 degrees for 15 minutes, or until hot and cheese has melted on top.

In the meantime, she prepared a fresh ingredients for the topping – including the diced tomatoes, shredded ice berg lettuce, and spring onion for garnishing.

Her post was met with more than 1,900 ‘likes’, with many saying they couldn’t wait to give her recipe a go.

‘This sounds like the most delicious thing in the world,’ one wrote, while another said: ‘Yum. Dinner sorted for tomorrow! Kidney beans are a good substitute if you don’t have Mexican Beans.’

And another mum added: ‘Love it! I like the addition of the fresh salad on it. We like to do nachos with a bbq slow cooked pulled pork. We make a big batch of pulled pork and freeze for lazy days.’

Some parents revealed they have made a similar dish for their family to enjoy.

‘We call them haystacks, load them with any salad you can think of. Been a Saturday family lunch for many years, so easy when you have a large amount of people to feed,’ one woman said.

While another added: ‘We do the same but sometimes we do the mince on top of roast sweet potatoes and add the rest on top.’
