Chicken Breakfast Sausages

Makes 4 Servings

Ingredients
  • 1pound extra-lean ground chicken
  • 1/4cup parsley (very finely chopped)
  • 3cloves garlic cloves, minced
  • 1/4teaspoon salt
  • 1tablespoon extra virgin olive oil
Directions
  1. In a mixing bowl combine chicken, parsley, garlic, and salt. Mix well.

  2. Heat the oil in a nonstick pan over medium heat.

  3. Form the mixture into thin patties approximately 4 inches (10 centimeters) in diameter. 

  4. In batches, cook for 4–5 minutes per side, or until cooked through.
