This glorious pulled BBQ mushrooms dish is ideal for lovers of pub-style food

Shredded sticky BBQ mushrooms on a toasted bun with fries and slaw – a hunger-busting plate of pub-style food!

Serves 1

  • 1 sweet potato, cut into chips
  • Olive oil
  • Salt and freshly ground black pepper
  • 1 portobello mushroom
  • 1 red onion, sliced
  • Tomato ketchup
  • 1tsp smoked paprika
  • 1tsp muscovado sugar
  • A small wedge of red cabbage, shredded
  • ½ a carrot, cut into matchsticks
  • 1tbsp mayonnaise
  • A bread roll, sliced and toasted

Preheat your oven to 190°C/fan 170°C/gas mark 5. Place the sweet potato chips on a baking tray lined with parchment, drizzle with olive oil and season with salt and black pepper. Cook in the oven for 30 minutes, turning occasionally.

Meanwhile, tear the mushroom into pieces with your hands. Pan-fry with half the sliced red onion in a splash of olive oil over a medium heat for about 10 minutes until the onions start to caramelise.

Add a big squeeze of tomato ketchup, the paprika and sugar, then simmer for a few minutes until the sauce goes a dark brown colour.

To make the slaw, mix the shredded cabbage with the carrot and the remaining red onion, then add a tablespoon of mayonnaise and a pinch of black pepper.

Serve the pulled BBQ mushrooms inside a toasted bun, with the slaw and sweet potato chips.
