Home cooks are obsessing over a Mexican-inspired healthy lasagne recipe, with many saying it’s the ultimate ‘crowd pleaser’.
The Australian experts from The Healthy Mummy have replaced the traditional pasta sheets and béchamel sauce for healthier alternatives to create the perfect lasagne without the guilt.
To make the dish, you’ll need beef mince, carrots, onions, capsicum, tomatoes, red kidney beans, taco seasoning, sour cream, cheddar cheese and wholegrain tortillas.

Over medium-high heat, sauté finely chopped onion in a non-stick frying pan along with one tablespoon of water.
‘This takes away the need for any added oil,’ the experts said.
Cook until the onion is soft and translucent, and water has evaporated before turning the heat to high, then adding the mince.
Break up any lumps and cook until mince is brown. Add carrot, capsicum, red kidney beans, diced tomatoes and taco seasoning and stir until the sauce thickens.
The experts suggested using ‘salt reduced’ beans, tomatoes and taco seasoning.
Lightly spray an oven dish with cooking spray. To assemble the lasagne, layer the dish with two tortillas, then half of the meat mixture. Continue layering with the remaining meat, then sour cream, and sprinkle cheese on top.

Bake in preheated oven for 40 minutes or until cheese melts, and golden brown.
‘Try serving it with light sour cream, or a simple guacamole of avocado mashed up with lemon or lime juice and salt and pepper,’ they said.
‘On the side you could serve a colourful salad of iceberg lettuce, diced tomato, diced red onion, diced red and yellow capsicum, grated carrot and cucumber.’
Many home cooks who made the lasagne shared pictures of their delicious creations, while others said the ‘amazing’ dish was a ‘big hit’ in their homes.
‘This is an amazing recipe… it’s definitely a crowd pleaser,’ one woman said,’ while another added: ‘Definitely a winner!’
And one woman insisted: ‘I could eat it every night, it was so delicious’, while many mothers said it was the perfect dish to hide all the vegetables from their kids.
Others suggested replacing the light sour cream with Greek yoghurt to create the ‘béchamel sauce’ on top of the healthy lasagne.
