A budget-conscious mother has shared the go-to family dinner she turns to time and again when there’s no meat in the freezer.

The woman posted on Facebook, where she revealed how she throws together her cheap tuna pasta bake with what she has left in the fridge and pantry – and all of her family love it and are happy to eat the leftovers the next day.

‘This is my go-to dinner when we have no meat in the freezer as all ingredients are a staple or pantry item,’ the Australian woman, called Nicole, wrote.

‘I saw someone earlier asking for tuna mornay recipes so here is mine.’

To make the delicious budget dish, Nicole said you will need tuna, lemon, cheese, butter, plain flour, milk, mustard powder, breadcrumbs, pasta, salt, pepper and thyme and paprika to season if you have them at home.

‘You can add onion or garlic or whatever else you want, sometimes I put peas and grated zucchini in it for veggies, but this is the original budget version my mum taught me and the one my kids like best.’ 

Nicole added that she also always makes enough to have instant freezer dinners and lunches for the next day.

How to make tuna casserole

INGREDIENTS

Tuna

Lemon  

Cheese

Butter

Plain flour

Milk 

Mustard powder

Breadcrumbs 

Pasta

Salt

Pepper 

METHOD

1. Drain the tuna, then pour the juice of one lemon into the tin with the tuna and let it sit.

2. Grate 300 grams of cheese.

3. Melt two tablespoons of butter in the saucepan.

4. On medium high heat, add one quarter cup of plain flour and stir into a paste.

5. Slowly add one litre of milk. Start with half a cup and whisk till the milk is warm to ensure the flour is not lumpy, then add the rest about a cup at a time.

6. Add a heaped teaspoon of mustard powder, then salt and pepper to taste.

7. Whisk on the stove top, until it starts to thicken.

8. Add grated cheese and stir through till melted.

9. Add tuna and lemon juice to a baking dish, and stir through the sauce.

10. Top with breadcrumbs and grated cheese. Add thyme and paprika if you want.

11. Bake in the oven at 200 degrees Celsius until golden on top.

12. Serve with fettucini.

When people saw the mum’s recipe online, they were quick to say they couldn’t wait to try it themselves at home.

‘Thanks so much for sharing, I’ll be making this very soon,’ one woman posted.

‘Looks delicious – a must try!’ another added.
