A professional baker has shared three easy tricks for baking boxed cake mix taste like ‘gourmet.’ 

Karly Stoddard, who runs a cupcake business in Oregon, shared the clever hacks on TikTok last week, where it’s already been viewed 7.4 million times. 

‘I know all of you are attempting quarantine baking, so I’m gonna show you all how to turn this,’ she says, holding up a box of Duncan Hines Classic White cake mix, ‘into gourmet cupcakes.’

So for those times when there’s less on hand — and less time — she suggests simply using boxed cake mix with a few tweaks.

Though she favors Duncan Hines’ Classic White, she says that any cake mix will do.

Other frequent bakers have suggested a similar trick, explaining that milk gives the cake a denser, richer texture than water.  

‘Instead of three eggs, you’re gonna do five eggs,’ she goes on.More eggs add more fat, which makes the cake richer and moister.

Finally, she says, ‘instead of vegetable oil, you’re gonna double the amount and use melted butter.’

Other proponents of using butter instead of oil argue that it gives the cake better flavor and also makes it denser — which can be especially useful for cupcakes if they’re being weighed down with frosting. However, other says that swapping one-to-one measurements is the way to go.

On the other hand, those that favor oil say it makes for a moister cake.
