Dr Clare Bailey Mosley specialises in encouraging people to make balanced food choices to better their health. She appeared on BBC Morning Live this week to share recipes that can help others with ideas when it comes to cooking up tasty but nutritious meals.

One included a power-packed breakfast of chorizo omelette, which takes mere minutes to make. To make the dish, you’ll need the following ingredients:

  • 1/2 tbsp olive oil
  • 1/2 small onion, peeled and finely diced
  • 4 free-range eggs
  • 30g cured chorizo, diced
  • 30g cheddar, grated
  • 30g cooked or leftover greens
  • Sauerkraut, to be served on the side

Dr Claire Bailey is the wife of the late Michael Mosley. She is also a GP with a particular interest in promoting diet and lifestyle changes for weight loss, reducing blood sugars, and reversing Type 2 diabetes.

The recipe for her chorizo omelette is packed full of protein and healthy fats. She describes it as the “perfect way to start the day”.

Whisk up your eggs, seasoning with black pepper and pour into the pan with onions. After 30 seconds, use a spatula to bring the egg into the centre of your pan.

Once the omelette starts to set, add in your chorizo, cheese and greens. Aftter about two minutes, you should be ready to fold the omlette and serve.

It includes plenty of protein to help make you feel fuller for longer. A typical supermarket egg contains roughly 7g of protein – meaning this recipe boasts at least 28g of protein.

They are more than just good protein sources. Eggs are very nutrient-dense. Containing vitamins A, D and E and essential omega-3 fatty acids

Whilst it’s not recommended to eat lots of it due to being processed meat that’s typically high in fat and sodium, chorizo has some health benefits, too.

It’s also a good source of protein and provides essential B vitamins like B1 and B12. These help promote better iron intake, which in turn aids in replacing red blood cells.
