Protein-Packed Power Omelette:

Ingredients:

– 3 large eggs

– 1/4 cup diced bell peppers

– 1/4 cup diced onions

– 1/4 cup chopped spinach

– 1/4 cup diced tomatoes

– 1/4 cup shredded cheddar cheese

– 1 tablespoon olive oil

– Salt and pepper to taste

Instructions:

Take a bowl and vigorously whisk the eggs until they are thoroughly beaten. Season with salt and pepper.

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the diced bell peppers and onions, saut until softened.
  3. Add the chopped spinach and diced tomatoes, cook for another minute.
  4. Carefully pour the beaten eggs over the vegetables in the frying pan or skillet.
  5. Sprinkle shredded cheddar cheese on top.
  6. Cook the omelette until the edges are set, then carefully fold it in half.

– 1/4 cup crumbled feta cheese

– 2 tablespoons olive oil

– 2 tablespoons lemon juice

Instructions:

  1. In a large bowl, combine the chickpeas, diced cucumber, bell pepper, red onion, and chopped parsley.
  2. In a little bowl, mix the olive oil, lemon juice, salt, and pepper together to create the dressing.
  3. Pour the dressing over the chickpea mixture and toss until well coated.
