Pancake Day is here and Brits are testing their pancake-flipping skills.

If you’re trying to stay healthy, Slimming World has a new air fryer pancake recipe that lets you enjoy Pancake Day without feeling guilty.

Slimming World‘s ‘Food Optimising’ plan helps you make tasty, healthy meals with everyday ingredients.

You’ll learn how to cut calories without counting them and find meals that suit your tastes, dietary needs and budget.

You can still enjoy eating in or dining out with family and friends.

If you prefer traditional pancakes, Slimming World also has a Scotch-style pancake recipe shaped like a heart for a bit of fun. Their new air fryer pancake recipe has a ‘cherry Bakewell twist’.

If you’re looking for an air fryer, the Tower’s Twelve Litre Air Fryer Vortx Oven is now on sale. Originally priced at £149.99, it’s now available for £69.99, saving shoppers £80.

I personally use the Philips 5000 Series XXL Connected Airfryer which is available for just £239.99 at John Lewis.

Ingredients:

  • 60g plain flour
  • 75ml skimmed milk
  • Three large eggs
  • ½ tsp of almond or vanilla extract (optional)

Method:

Mix the flour, milk, 25ml water, eggs and flavoured extract (if using) in a bowl or jug. Whisk until smooth, add a pinch of salt and leave it in the fridge for 30 minutes.

Set your air fryer to 200C. Pour some of the mixture into a silicone pancake mould and repeat until all the holes are filled.

Cook in the air fryer for three minutes. Use a spatula to loosen the edges and flip the pancakes over, then cook for another two minutes.

Once they’re cooked, put the pancakes on a plate and keep them warm while you cook the rest.

Serve with your favourite toppings we used cherries, natural yoghurt and flaked almonds.
