This delicious roast chickpea gyros is a nutritious meal that will impress vegetarians
Roasted chickpeas, which have a slight crunch, are perfect for wrapping in a flatbread to make a meat-free version of that Greek classic, the gyro.
Serves 1
- 200g (7oz) chickpeas (from a 400g tin), drained
- Olive oil
- 1tsp ground cumin
- 1tsp smoked paprika
- Salt and freshly ground black pepper
- 40g (1½oz) plain flour, plus extra for dusting
- 25ml (¾fl oz) cold water
- 2tbsp crème fraîche
- A pinch of dried oregano
- A few lettuce leaves
- A few cherry tomatoes, chopped
- A few slices of red onion
Preheat your oven to 190°C/fan 170°C/gas 5. Put the chickpeas in an ovenproof dish with a glug of olive oil, the cumin, paprika and a pinch each of salt and black pepper. Roast in the oven for 20 minutes, or until golden brown.

Meanwhile, make the flatbread. Mix the flour and water in a bowl with a pinch of salt to form a dough.
Dust the worktop with a little extra flour, then knead the dough for 1 minute, or until smooth. Roll it out into a circle about 20cm in diameter.
Heat a dry frying pan or griddle pan over a high heat, add the flatbread dough, and cook for about 1 minute on each side, until nicely toasted.
Make the creamy sauce by mixing the crème fraîche in a bowl with a pinch each of salt and black pepper and the oregano.
Assemble the gyro by stuffing the flatbread with lettuce leaves, chopped tomato, slices of onion, the sauce and the roasted chickpeas. Fold the gyro in half to eat.
