How to make the perfect pork belly with crackling in the air fryer

INGREDIENTS

  • Pork belly
  • Olive oil
  • Salt

METHOD

Pat pork belly dry with paper towel.

Preheat air fryer for five minutes on 200C. Rub oil and salt well into the scores of the pork then place in the air fryer, rind-side up on 200C for 25 minutes, then roast on 175C for a further 35 minutes until rind is crisp and crackling.

Rest for 10 minutes before carving.

The method is very simple, with scores of home cooks sharing different techniques to roast the pork belly in the air fryer.

One mother said she made the ‘perfect crackling’ without resting the pork belly overnight.

To begin, she rinsed the pork belly, then patted it dry with a paper towel. Using a shark knife, gently score the rind and fat of pork but don’t cut through meat.

‘I then preheated the air fryer to 200C and while waiting, I rubbed the pork belly down with one to two tablespoons of olive oil, making sure the entire fat side was completely covered in oil,’ she said.

‘Then I only used about one to two tablespoons of salt to rub all over the fat making sure to get salt into the scoring of the skin.

‘Once the air fryer has reached 200C, I put the pork belly straight in as is (no aluminium foil needed) and let that cook for 20 minutes.

‘I then pulled it out and dusted off any excess salt and then lowered the heat to 160C and put it back in for 30 minutes. Pulled it out and rested it on a rack for five minutes before cutting it up. It came out perfect.’

‘Few hours before cooking pat dry with paper towel again, rub salt in and put back in fridge uncovered. Pre heat air fryer for five minutes on 200C.

‘Oil and salt pork then put in air fryer on 200C for 25 minutes then 175C for 35 minutes. Rest for 10 minutes before cutting.’
