This glorious leek & blue cheese tart pairs perfectly with a leafy salad for a nutritious lunch
Sweet sliced leeks make a great filling, and create a lovely base for the blue cheese. There’s no pre-cooking required, so this is very simple.
Serves 1

- 15cm x 15cm square of puff pastry
- ¼ of a leek, very thinly sliced
- Olive oil
- Salt and freshly ground black pepper
- A small handful of chunks of blue cheese
Preheat your oven to 190°C/fan 170°C/gas 5 and line a baking tray with parchment.
Lay the pastry on the lined tray and score a 1cm border all the way round. Prick the middle of the pastry multiple times with a fork, inside the scored line.
Lightly coat the thinly sliced leeks in a tiny splash of olive oil and season with a pinch each of salt and black pepper.
Pile the leeks into the middle of the pastry, rub a small amount of olive oil onto the edges of the square, and bake for 15-20 minutes, until the pastry is golden brown. Remove from the oven, top with chunks of blue cheese and serve.
